Winemaking :
Our Jadis cuvée is a blend of three grape varieties found in our region. Chardonnay dominates with 60%, followed by Pinot Noir with 30%, and finally Meunier with 10%. The grapes are harvested in 2010 from the prestigious Crus de Cumières and Hautvillers (1st growths), and the juice comes from the first two selections. Fermentation takes place 100% in oak barrels, the first corking is done with cork, and then our cuvée rests on laths for almost 10 years. Jadis is an extra-brut champagne, with a dosage of 5 g/litre. The dosage is made up of reserve wine and cane sugar.
Tasting :
The Cuvée Jadis 2010 vintage faithfully reflects the style of the Maison Caillez-Lemaire, while expressing the characteristics of this specific year: a lovely freshness, a marked sapidity and a certain fluidity on the palate. Lovers of mature champagnes, perfect for relaxing by the fireplace, should not hesitate to cellar this bottle for three to four years.
Pairing :
To fully appreciate the expression of our Jadis, we recommend serving this champagne in a wine glass, at a temperature of 10 to 12 degrees. At the table, it goes perfectly with tender, creamy, autumnal dishes such as poached Bresse poularde with cream sauce and mushrooms, or truffle quenelles.
We make our cuvées without MLF, fining or filtration before bottling.
