Winemaking :
Our Reflets cuvée is a blend of the three main grape varieties of Champagne, with a predominance of Meunier followed by Pinot Noir and Chardonnay. The grapes come from five villages: Damery, Cumières, Hautvillers, Fleury-la-Rivière and Vauciennes, reflecting our terroir. Part of the fermentation takes place in oak barrels, and the cuvée is aged for 20 to 30 months on laths. Reflets is an extra-brut with a dosage of 5g/litre, and an expedition liqueur made from reserve wine and cane sugar.
Tasting :
The aromas of Reflets are mainly fruity, with notes of citrus fruit, white flowers and bread dough. This wine should be drunk between 8 and 10 degrees in a slender flute to appreciate its soft, sparkling attack. A balance is struck between its voluminous texture and its natural freshness, giving the sensation of biting into a piece of fruit. The finish is long and slightly acidic.
Pairing :
To accompany Reflets, you can opt for salmon gravelax, scallops or gougères as a starter. As a main course, it goes well with vegetable risottos and white meats, and with white pudding for meat dishes.
We make our cuvées without MLF, fining or filtration before bottling.
