Winemaking :
Our cuvée Fine Champenoise comes from all our plots, with almost all the grapes harvested in the early 1980s. For this cuvée, we use the Rebêches, the last juices from our 4,000 kg pneumatic membrane press, with the exception of the first 116 litres, reserved for making Ratafia.
Tasting :
After vinification, the process continues with distillation at the beginning of the following year, carried out by an itinerant distiller specially brought to DAMERY. This double distillation is carried out in a copper still, producing a wine eau-de-vie with an alcohol content of over 60% vol. This eau-de-vie then becomes Fine Champenoise after approval, ageing for many years in oak barrels. Gradually, the younger barrels are added to the older ones, as the wine is bottled, reaching an alcohol content of 41% vol.
We make our cuvées without MLF, fining or filtration before bottling.
