Winemlaking :
Our Marc Champenois cuvée comes from all our plots, with almost all the grapes harvested in the early 1980s. For this cuvée, we use the solid parts (skins, pips) from the destemmer (crusher) after crushing for the production of red Côteaux Champenois or rosé Champagne.
Tasting :
These solid parts, which we also call the marc, ferment and are then distilled at the beginning of the following year by an itinerant distiller specially brought to DAMERY. The double distillation is carried out in a copper still, producing an eau-de-vie de marc with an alcohol content of over 60% vol. This eau-de-vie then becomes Marc Champenois after approval, ageing for many years in oak barrels. Gradually, the younger barrels are added to the older ones as the wine is bottled, reaching an alcohol content of 41% vol.

Marc Champenois, the traditional Champagne spirit, is presented here in its most authentic form. Straightforward, generous and bewitching after just a few sips, it bears witness to a rare Champagne savoir-faire. This marc is perfect as an after-dinner drink, but it can also be enjoyed with delicate desserts such as vanilla ice cream, sorbets, tarte Tatin or chocolate. For the more daring, we invite you to try it with Camembert, for a surprising and memorable taste experience. Marc Champenois offers an authentic and refined tasting experience, showcasing all the expertise of our region.
We make our cuvées without MLF, fining or filtration before bottling.
