Winemaking :

Our Pur Meunier cuvée is made exclusively from the Meunier grape variety, harvested from our plots in DAMERY. The 2016 harvest was selected to create this vintage. We only use the juice from the first two pressings, made up of the "têtes de cuvée". For its vinification, we have opted for an approach that is resolutely respectful of the terroir and the grape variety: 100% of the fermentation takes place in oak barrels from the Tonnellerie de Champagne, made with oak from the DAMERY forest. Pure Meunier is aged for 4 years on laths. Our cuvée is brut nature, not measured out.

Tasting :

The 2016 vintage offers a rich and balanced taste experience. Aromas of grape must, blue plum, baguette bread and candied cherries intermingle on the nose, with hints of spice, melted butter, pecans and Ratafia in the background. On the palate, a creamy texture and well-integrated effervescence are accompanied by structured acidity, giving way to aromas of bitter almond and liquorice juice. The finish is slightly tannic and saline, prolonging this gourmet and bewitching sensation.

Pairing :

Pur Meunier goes perfectly with gourmet dishes. We recommend serving it in a wine glass, at a temperature of between 10 and 12 degrees. At the table, it goes well with foie gras canapés, roast scallops, a poultry liver terrine, Iberian ham, veal fillet with cranberries or 18-month Comté cheese. Thanks to the absence of dosage, our cuvée reveals all its purity, making it a marvellous match for delicate, harmonious dishes.

We make our cuvées without MLF, fining or filtration before bottling.
