Winemaking :
Our Reflets cuvée is a blend of the three main grape varieties of Champagne, with a predominance of Meunier followed by Pinot Noir and Chardonnay. The grapes come from five villages: Damery, Cumières, Hautvillers, Fleury-la-Rivière and Vauciennes, reflecting our terroir. Part of the fermentation takes place in oak barrels, and the cuvée is aged for 20 to 30 months on laths. Reflets is a 32g/litre demi-sec, with an expedition liqueur made from reserve wine and cane sugar.
Tasting :
Reflets demi-sec has gourmet aromas of cream and biscuit. The nose is more mature, complex, and accessible. We recommend that you enjoy this wine at 8 degrees in a flute with a wide beaker. It has a full attack on the palate and a pleasant consistency, as the dosage blends completely with the effervescence.
Pairing :
Our Demi-Sec Reflets is an ideal after-dinner wine. We recommend oriental dishes such as tagines with dried fruit, spicy dishes, or creamy cheeses, which will provide pleasant surprises. For the end of the meal, Reflets demi-sec is very well suited to desserts made with fruit and cream.
We make our cuvées without MLF, fining or filtration before bottling.
