Winemaking :
Our Rosé cuvée is a blend of two grape varieties, mainly Meunier (around 2/3) and Pinot Noir. We blend the musts (juices) rather than the wines. The yeasts from the fermenting red wine mix with the white wine, giving the rosé its characteristic flavour. The cuvée is aged for between 20 and 30 months on laths, with part of the ageing in oak barrels. Rosé is a demi-sec with a dosage of 32g/litre, with an expedition liqueur made from reserve wine and cane sugar.
Tasting :
The first nose of the Rosé demi-sec offers aromas of strawberry and rose, with aeration revealing notes of liquor ice, aniseed and peony. We recommend drinking this wine at 10°C in a well-shaped flute. This temperature is ideal for appreciating its lively, greedy attack on the palate, which develops into a winey, rounded wine. The wine becomes almost unctuous but remains fresh thanks to its lemony aromas.
Pairing :
At the table, this wine will appeal to red fruit desserts, but paradoxically it will be at its best when enjoyed with savory dishes. You might pair it with a fromage de tête, a poultry liver parfait, or a selection of ewe's milk cheeses.
We make our cuvées without MLF, fining or filtration before bottling.
